Steamed Eggs and Spinach

Breakfast during the reset is savoury rather than sweet. This is the one I make most, and it takes about eight minutes of which seven are unattended.
Method
Crack two eggs into a 6 oz ramekin. Add a handful of spinach. Set the ramekin on a steamer tray over simmering water, cover, and steam until just set. The centre should still have a slight wobble when you take it out. Black pepper, herbs, no salt.
Why steam rather than fry
No added fat you did not plan for. The texture comes out soft rather than rubbery, because the eggs cook gently. Nothing sticks, so there is no pan to scrub. And it is close to unattended, which matters at seven in the morning more than any of the rest of it.
Why ramekins
The egg holds its shape instead of running across a tray, portioning happens automatically, and you can steam several at once. Porcelain takes the heat well and washes clean.
Run four or five at a time and breakfast is handled for several days.
Variations
Tomato, mushroom, and fresh herbs all work. Chopped broccoli works if you steam it a few minutes before adding the eggs. What does not work is cheese, which inverts the sodium ratio the whole fortnight is built to correct.
